Alfredo Chicken Ravioli | Abigail's Kitchen | www.abigailkuhn.com

You’ll love this comfort food recipe with it’s creamy goodness, tender chicken and cheesy stuffed ravioli. It’s a weeknight wonder for sure. My kids absolutely loved this dish even the little man.

We served it with a side salad and it was plenty for our family of 5 although I did make one extra so I have that for another night.

Recipe Walk-through

You’ll start with the chicken, cooking it in the instant pot makes it quick and tender. I love using my instant pot. The one I use is here: https://amzn.to/3QvibxR it makes weeknight dinners quick and easy especially when I’m doing a meat that usually takes awhile to prepare. With my instant pot I can whip up Chicken dishes within 30 minutes. Even cooking a roast in the instant pot is super easy, but that’s for another time.

Place your chicken breasts (about 3-4) in the bottom of your instant pot and pour in 1 cup of water. Sprinkle seasonings to your desired taste (I would use 1 1/2 tsp of salt, 1/2 tsp pepper, and 1 tsp. onion powder- you’ll find these are staple seasonings in my pantry). Put the lid on and set the steam setting to no vent, choose the chicken setting and hit start.

Once the chicken is finished you’ll shred that. I have found that using a hand mixer to shred my chicken makes things so much easier and it’s very nicely shredded.

Now it’s time for the ravioli, you’ll grease a 9 x 13 baking dish (here is a great dish to use: https://amzn.to/3Uo9pni). I made a mistake when I made this recipe, I didn’t grease my dish so the ravioli stuck to it, so make sure to grease it. A coating of cooking spray works just fine. Place the ravioli in the baking dish spread out evenly. There’s no need to individually place the ravioli just sprinkle it in the dish.

Then place in your preheated 350F oven for about 20-25 minutes or until heated through.

Serving Suggestions:

Then serve with a side salad and garlic bread if you desire.

My little man (2 year old) gobbled this right up along with my 10 year old twins and my husband.

  • 2-3 Chicken Breasts
